To pick elderflowers, we waded through marshes and prickly fields under the guidance of a local foraging expert, Friendly Forager. The blossoms are so tiny that we then had to gently comb the flowers off the branches with a fine-toothed comb. Long popular in cordials and wines, this fresh new elderflower mead punches above its weight. The batch will be a limited edition spring 2015 release: approximately twelve cases of 375 ml bottles!
